Food Network Healthy Slow Coker Mexican Chicken

I'm trying out a new recipe today.

If you know me at all, you know that I love using our crock pot.

I thought this recipe from Food Network sounded yummy.


I used the same ingredients as they listed.

I did add 4 whole cloves of garlic.

I only used pepper on the chicken, no salt.

Instead of frozen white corn, I added a can of whole corn.


This is a really easy recipe to follow.

It doesn't take a lot of time to prepare, that makes it even better, right?

I followed their instructions & mixed everything together.
I have the green pepper & onion on the bottom.

Follow by chicken breast with garlic on top.

Finished off with the corn/bean/salsa mixture. Wasn't that easy?

Not to mention its good for you too.

The great part is that its only 9:30am & dinner is well on its way to being done.

I will make sure & give you an update tonight on how it turned out & my family's reaction.
